The ceramic non stick is very high quality .I use it for pancakes, eggs, bacon, hamburgers, searing beef roast (has sear setting). I made a beef-mushroom gravy in it just today.Love the inset pan comes out. I usually just wipe it out as it cleans like a breeze.I absolutely love this pan. Barely use my stovetop now.
